Comfort Food In June

Don’t get me wrong. I enjoy eating out. Especially for things that I am incapable of making myself – e.g., sushi. But at the end of most days I just want to eat at home. And while everyone has been complaining about the bad weather I’m secretly just a little bit happy. Why? I love comfort food. My idea of comfort food changes throughout the year. It’s June, so I’m not going to make chili or a heavy soup. Instead I opt for things I don't need to eat immediately and I can also eat as leftovers. So comfort food? Check. Convenient? Check. Simple? Yes.

 

Frittata – If you’ve never tried one of my frittatas you probably haven’t known me very long. It’s a one pan recipe which is partly why I love it so much.

 

Ingredients:

10 eggs

15 ounces Ricotta cheese

.5 pound Mexican cheese

2 cups potatoes

3 shallots

1/3 cup flour

3/4 tsp. baking powder 

.5 tsp. salt 

.5 tsp. pepper

 

.5 pound prosciutto (optional) If you're adding, crisp up separately before adding to mixture. 

 

Prep: Preheat oven to 350. Peel and dice potatoes into small cubes. Chop shallots. Melt butter.

 

Prepare: Sauté shallots in 2 Tbs. of olive oil. Once soft, add potatoes and sauté until cooked through. In a separate bowl, whisk eggs.  Add the ricotta, Mexican cheese and melted butter; mix completely. Stir in flour, salt, pepper and baking soda and pour mixture over the potatoes. Pop into the oven and set your timer for 50 min and go do something else! Shower, take a nap, whatever floats your boat.

 

Soup - A perfect addition to the frittata, or really to any dish.  This light soup is a great option.

 

8-10 cups chicken broth (homemade is great but not necessary)

12 oz frozen spinach 

4 eggs

6 oz dried riso pasta

4-6 oz parmesan cheese (NOT out of the green bottle please)

salt and pepper to taste

 

Put chicken broth to heat until boiling.  Add pasta and cook until al dente.  Add frozen spinach and let simmer for 2-3 minutes.  Scramble 4 eggs and add to pot.  Stir all together and when egg is cooked add parmesan.  Season with salt and pepper.

 

Disclosure:  All these amounts are estimates.  Feel free to make changes.  In my family we cook by throwing things into a pot without measuring anything so go ahead.....improvise.
